White Nectarine and Avocado Salsa

White nectarines have been in heavy rotation in my dishes lately. They’re the Rainier cherries of the nectarine world– always sweet and never disappointing. Consider swapping white nectarines with mango or peaches and you won’t be disappointed.

  • 1 white nectarine
  • 1/2 ripe avocado
  • fresh basil
  • fresh mint
  • fresh cilantro
  • 1/2 jalepeno, seeds removed
  • large pinch of sugar
  • sea salt
  • juice of 1/2 lime

  1. Dice nectarine and avocado.
  2. Chop basil, cilantro, and mint.
  3. Mince jalepeno.
  4. Combine ingredients from steps 1-3 in a bowl with lime juice. Add sea salt and sugar to taste.
