Meatless Monday: Roasted Butternut Squash with Burrata

This may be the easiest recipe ever. It requires only two main ingredients and little to no hands-on time. Simply roast the butternut squash (cut in half lengthwise, face-down, with a bit of water on a cookie sheet) in a 350 degree oven for 45 minutes or until tender. Slice and serve with burrata, olive oil, salt, pepper, and red pepper flakes.

You won’t believe how good this is.
